WHY SOFRETNA?

In the local Arabic dialect of Antakya, Sofretna translates to

"Our Table".

 

This name represents an approach that views Antakya’s cuisine as a collective memory and a shared way of life. Sofretna centers the place where food is produced, shared, and remembered.

 

Rooted in Antakya but spoken to the world, this project narrates our gastronomic memory from within, collectively, and in continuity.

WILD ROCK RESIDENT: ZAHTER

It has a much more aggressive and distinct character than greenhouse thyme. It’s woodier, more resinous, and sharper. If you rub it between your fingers, the scent lingers for hours. That’s just proof of how potent the essential oils are.
